Why twice a week
Coffee is at its best between four days and four weeks off the roaster. Roasting on Monday and Thursday means nothing in the warehouse is more than three days old when it ships — which is a slower and more wasteful way to work than roasting once a fortnight into a warehouse, and the difference you can taste.
What we pay
We buy through importers who publish what the farmer received. For our Colombia Huila that is 38% over the commodity price, agreed a year ahead. That premium is the reason the cooperative could replace the drying beds the 2024 rains took out.

Four of us: two roasting, one on wholesale accounts, one who does everything else and makes the best flat white in the building.
